Salads and aperitivo


Matthew McConnaughey Tuna Salad

Online

Ingredients

  • Tuna
  • Mayo
  • Wasabi
  • Lemon
  • Vinegar
  • Italian dressing
  • Onion
  • Tiny pickles
  • Apple
  • Crispy jalapenos
  • Agave syrup
  • Corn
  • Peas

Recipe

  • Tuna in a bowl
  • In a separate bowl mix mayo, wasabi, vinegar and lemon
  • Mix with tuna
  • Cut onions, pickles and apple. Mix in with the tuna
  • Add in the dried jalapenos
  • Add the agave
  • Add the corn and peas
  • You’re done
  • Allow to marinate for a bit

Crashed Radishes

Ingredients

  • Radishes
  • Dill
  • Garlic
  • Salt—1 tea spoon
  • Sugar—1 tea spoon
  • Vinegar—1 table spoon
  • Oil (Vegetable, should find some that is not ass for me)—1 table spoon
  • Pepper to taste

Recipe

  • Beat the radishes with a suitable tool (such as a mug or rolling pin) until they crack but do not fall apart. Place in a jar, leaving some space
  • Add finely chopped dill, crushed garlic, salt, sugar, vinegar, vegetable oil, and pepper
  • Close the jar tightly and shake well to combine. Refrigerate for at least a couple of hours, preferably overnight

Chicken Cucumber Salad

Ingredients

  • 250g of cucumber
  • 100g chickpeas
  • 150g chicken breast
  • 150g Greek yogurt (5%)
  • 1/2 of a red onion
  • Garlic clove crushed
  • Juice of half a lemon
  • Salt, pepper to taste

Recipe

  • Chicken can be fried or air-fried
  • Just add everything to a bowl and shake / mix

Gravel

Ingredients

  • 2–3 potatoes
  • Half of a regular onion
  • 2–3 cucumbers
  • 4–5 cherry tomatoes (may need to adjust this)
  • Dill
  • Peas (I prefer the canned ones from Banduele, but you can go with frozen as well)
  • Chili flakes
  • Spicy ramen
  • Some kind of sauce, the original recipe uses chatpate

Recipe

  • Boil the taters, you can pre-dice them to boil faster
  • Mix everything in a bowl, ramen can just be crushed up

Korean bbq Shotgun Shells

  • A pack of Manicotti
  • A pack of bacon
  • Ground beef and pork, or a store-bought mix, around a kilo
  • 1 handful of green onions
  • 1/4cup of canned carrots, can also be substituted with bell peppers
  • 4 table spoons of Soy sauce
  • 1 table spoon of sesame oil
  • 1 table spoon of chili oil
  • 2 table spoons of Gochujang
  • 2 garlic cloves
  • 1 table spoon ginger
  • 3 table spoons of bbq Rub
  • 4 table spoons of bbq Sauce

Spicy Korean Mayo Ingredients

  • 1/2 Cup Mayo
  • 2 table spoon Gochujang
  • 2 table spoon honey
  • 1 lemon

Recipe

  • Add your ground beef and pork, Green Onions, Carrots (or bell peppers), Soy Sauce, both oils, Gochujang, Garlic, Ginger in a bowl and mix
  • Add the mixture to a bag for piping
  • Add mixture in Manicotti Shells and wrap with regular bacon
  • Refrigerate overnight or for 3–4 hours
  • Add your favorite bbq rub
  • In the smoker or in the stove at 170 degrees for 45 min
  • Then add bbq sauce and let that set for 10–15 minutes or until bacon is cooked
  • Garnish with Spicy Korean Mayo, Green Onions, and Sesame Seeds

Drug eggs

Ingredients

  • Eggs
  • Green onion, ginger, red chili, garlic and an onion
  • Soy sauce, rice vinegar, honey, sesame oil, sesame seeds and some water

Recipe

  • Boil the eggs for 7 minutes
  • Chop everything and add to a container
  • To the same container add all the liquids
  • Peel the eggs and put into the container as well
  • Let them marinate overnight ~12 hours

In-n-Out bbq Onion Rings

Ingredients

  • ~500g ground beef
  • 6 onions
  • 2 table spoons of butter
  • 1 table spoon of Worcestershire
  • Salt, pepper and garlic to taste or 2 table spoons
  • 1/2 cup chopped pickles
  • 230g of cheddar
  • 24 bacon slices
  • 4 table spoons of bbq rub
  • 6 tablespoons of bbq sauce
  • Sesame seeds

Optional In-n-Out Sauce

  • 1/2 cup of mayo
  • 3 table spoons of ketchup or tomato paste
  • 2 table spoons of sriracha
  • 2 table spoons of relish
  • 1 table spoon of apple cider vinegar
  • 1 tea spoon of sugar
  • 2 table spoons of water

Recipe

  • Cut ends of Onions and slice in the center and use a big and smaller ring. These will be used for the rings themselves
  • Using the rest of the onion you did not use. Chop about 1 cup and sauté in a pan with 2 Tbsp Butter and 1 Tbsp Worcestershire for about 8 minutes until soft
  • In a bowl add Ground Beef, Sautéed Onions, Seasonings, Pickles, Cheddar Cheese, and mix well
  • Stuff in the mixture and use 2 slices of bacon to cover the rings
  • Season with your favorite bbq Rub
  • In the Smoker or oven at 120 degrees for about 1.5 hours
  • Then baste with bbq and top with sesame seeds and back in the smoker for about 15 minutes

Soups


Ezogelin

Ingredients

  • 2 table spoon olive oil
  • 1 table spoon butter
  • 2 medium onion, diced
  • 8 cloves garlic, minced
  • 2 table spoons Turkish red pepper paste (biber salçası)
  • 2 table spoons tomato paste
  • 1 table spoons dried mint
  • 1 tea spoon ground cumin
  • 1 tea spoon paprika
  • Red pepper flakes (to taste)
  • 1 cup red lentils, rinsed and drained
  • 1/3 cup coarse bulgur, rinsed and drained
  • 1/4 cup short-grain rice, rinsed and drained
  • Salt & pepper to taste
  • Chicken stock or water as needed

Spiced butter

  • 1/3 stick of butter
  • 1 table spoon of mint
  • 1 table spoon of paprika
  • 1 table spoon of Turkish red pepper paste
  • salt to taste

Recipe

  • In a large soup pot, saute onions and garlic until fragrant before adding in both your tomato paste and Turkish red pepper paste
  • Add your lentils, bulgur, and short-grain rice and mix. Add in chicken stock until the pot is filled. let simmer for 30–40 minutes, or until the grains are soft and fully cooked and the soup has thickened. Make sure to stir occasionally
  • While this is going, make your spiced butter. Just combine everything under “spiced butter” and whisk together until combined
  • Serve your Ezogelin soup with a squeeze of lemon juice, and a drizzle of the spiced butter and enjoy

Main courses


Tomato and Chicken pasta

  • 450g of cherry tomatoes
  • 120g of feta
  • Olive oil
  • Salt, pepper, oregano and chili flakes
  • Pasta
  • Chicken breast
  • Some greens

Recipe

  • Lay cherry tomatoes in a baking thing, put feta on top, drizzle with oil, apply the spices. Put in the oven at 200C for 35 min
  • Split the breast and fry it with salt and pepper
  • Boil the pasta
  • Mix everything when the sauce is done

Mac and Cheese

Ingredients

  • 450g cottage cheese
  • 100 ml Milk
  • 20g nutritional yeast
  • 240g cheese
  • 500g of pasta
  • Spices (salt, pepper, paprika and chilli powder which is optional)

Recipe

  • Cook your pasta with a little bit of salt, in a blender add your cottage cheese, milk and spices, blend until smooth
  • Now on low heat, add your sauce to a pan and add your cheese and nutritional yeast. Don’t cook the sauce or it will get watery, but just mix the cheese in and immediately remove from heat
  • Now add your sauce to your pasta and there’s your meal

Black Garlic Steak and Rice

  • 800-900g beef steak (2 pounds)
  • 450g of rice
  • 100g of mushrooms
  • 1 shallot
  • 3 cloves of garlic
  • 40g of butter
  • 35g of light miso
  • Seasonings: Salt, pepper, black garlic powder, chili flakes
  • Garnish: green onion

Recipe

  • Steak medium chop, mix with salt pepper and black garlic. In the hot pan
  • Boil rice
  • When steak is done on the outside only take it from the stove
  • In the “meet juice” in the pan put butter, miso, mushroom and chili flakes
  • Add shallot and garlic, saute for a couple of minutes
  • Add the steak back in on lower heat. Let it absorb all the flavor

Chili Noodles

  • Oil
  • Chili flakes 3 table spoons
  • Soy Sauce 2 table spoons
  • Black vinegar 1 table spoon
  • Sugar 1 table spoon
  • Garlic 4 cloves
  • Ginger 1/2 of a knob
  • Green onions 4 stalks
  • Sesame seeds
  • Ground pork 250g

Recipe

  • Crush and chop the garlic, grind the ginger, chop the onions and separate the greens from the whites
  • Mix soy sauce, vinegar, sugar, chili flakes and sesame in a bowl
  • In a hot pan with oil mix garlic, ginger and onions
  • Add ground pork and salt when the mixture gets fragrant
  • When the pork is almost done add in the sauce and the noodles
  • Top with the green part of the onion

Crispy Beef Tacos

Ingredients

  • 450-500g of ground beef (a mix can be used, preferably 80/20)
  • 1 yellow onion, diced
  • 6 garlic cloves, minced
  • 2 table spoons of tomato paste
  • 1/2 cup beef stock
  • 1 tablespoon of oil

Taco seasoning

  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 2 tea spoons paprika
  • 2 tea spoons oregano
  • 2 tea spoons garlic powder
  • 2 tea spoons black pepper
  • 1 tea spoon cayenne (optional)

Garlic lime Aioli

  • 1/2 cup of sour cream
  • 1/2 cup mayo
  • 1 small jalapeno, deseeded (optional)
  • 1.5 cups of cilantro (leaves + stems)
  • 4–5 garlic gloves
  • 2 tea spoons black pepper
  • 1 tea spoon salt
  • Juice of 1 lime

For the tacos themselves

  • 10 to 12 mini tortillas
  • 2 cups of shredded mozzarella
  • Oil for frying

Recipe

  • In a small bowl, whisk together the homemade taco seasoning spices to create a blend
  • Heat 1 tbsp oil in a large pan over medium heat. Add the diced onion and saute until soft and fragrant, about 3–4 minutes. Add the minced garlic and cook for another 30 seconds. Add the ground beef and break it up. Cook until mostly browned. Add the taco seasoning and tomato paste, mix well, and saute for 2–3 minutes. Pour in the beef stock and cook for 8–10 minutes, or until the liquid evaporates and the beef is saucy and fully cooked. Set aside
  • In a blender or food processor add all of the aioli ingredients. Blend until smooth and green
  • Lay a tortilla flat. Add a thin layer of mozzarella, 2–3 tbsp of the beef filling, then another sprinkle of cheese. Fold it over. Repeat until you’re done
  • Heat a light layer of oil in a pan over medium-low heat. Add the folded tacos and cook until golden and crispy on both sides, adding more oil as needed. Work in batches so they crisp
  • Plate them up, drown them in the garlic lime aioli, add extra cilantro (optional)

Chicken Alfredo (meal-prep edition)

Ingredients

  • ~1400g chicken breast
  • 4–5 diced bell pappers
  • 20g of minced garlic
  • 30g of butter
  • ~900g pasta

Blackening Seasoning

  • 2 table spoons paprika
  • 1 table spoons onion powder
  • 2 tea spoons garlic powder
  • 1 tea spoon ground black pepper
  • 1 tea spoon dried oregano
  • 1/2 tea spoon dried thyme
  • 1/2 tea spoon cayenne (optional)

Alfredo Sauce

  • 800g 2% blended cottage cheese
  • 180g parmigiano reggiano
  • 120g cream cheese
  • 240ml milk
  • Salt and pepper to taste

Recipe

  • Cut up the breasts, beat them into a flatter peace
  • Mix the seasoning and season the chicken generously
  • Cook 5 minutes on each side on the pan
  • Chop the bell peppers
  • Pull out the chicken and add the peppers to the same pan, add butter and minced garlic
  • Boil pasta
  • Add the chopped chicken and pasta back to the peppers
  • Blend the sauce and add it to the thing

Chicken Fajitas

Chicken marinade

  • 800g chicken thighs, sliced
  • 3 table spoons mayo
  • 2 table spoons oil
  • 2 table spoons of honey and juice of 1 lime
  • 7 garlic cloves, minced
  • Seasonings: 2 table spoons paprika, 1 table spoon chili powder, 1 table spoon cumin, 1 tea spoon cayenne (optional), 2 tea spoons oregano, 2 tea spoons onion powder, 2 tea spoons garlic powder, 2 tea spoons salt and 2 tea spoons pepper

Vegies

  • 1/2 red onion, sliced
  • 1/2 each of red, yellow, orange and green bell pepper, sliced
  • 2 tablespoons of oil
  • Veggie seasonings (1 tea spoons each): garlic powder, cumin, chili powder, paprika, oregano, onion powder, salt, pepper

Roasted garlic

  • 1 head of garlic, top sliced off + 1 table spoon of oil and 1 tea spoon of salt

Roasted garlic chipotle sauce

  • 1/2 cup sour cream + 1/4 cup of mayo
  • Roasted garlic from above
  • 2 chipotle pepper + 1 table spoon honey + Juice of 1/2 lime

Recipe

  • Add the sliced chicken to a bowl with mayo, oil, honey, lime juice, garlic, and all chicken seasonings. Toss until everything is coated. Marinate for at least a few mins, or up to overnight. Longer = better flavor
  • Preheat oven to 220°C. Drizzle the garlic head with oil and salt, wrap it in foil, and place on a tray. Roast for 45–60 minutes, until soft & golden
  • Add all sliced veggies to a large sheet pan. Drizzle with avocado oil, sprinkle with veggie seasonings, and toss to coat. Add the marinated chicken directly onto the pan with the veggies. Toss everything together so it plays nice. Bake for 20–25 minutes, until the chicken is fully cooked, lightly charred, and the veggies are tender
  • Once the garlic is cool, squeeze the roasted cloves into a blender or food processor. Add sour cream, mayo, chipotle peppers, honey, and lime juice. Blend until smooth
  • Spoon pan juices back over the chicken. Top with cilantro, extra lime, and dollops of the chipotle sauce
  • Serve with wraps or tortillas

Chicken Gyro

  • 5 cloves of garlic, minced
  • 1/2 red onion, fully chopped
  • 1/2 lemon juice
  • 1/3 cup plain greek yogurt
  • lemon zest (optional)

Seasonings

  • 1 table spoon cumin
  • 2 tea spoons smoked paprika
  • 1 tea spoon oregano

Tzatziki

  • 1 tablespoon olive oil

Salad

  • 12 cherry tomatoes, cut in half
  • 1/2 red onion, sliced
  • 1 table spoon olive oil
  • 1 tea spoon salt

Wrap

  • Pitas

Recipe

  • Preheat oven to 220°C. Pat your chicken dry, then toss it in a bowl with olive oil, garlic, red onion, lemon juice, zest, and seasonings. Mix well and marinate for as long as your patience allows. Preferably overnight
  • Halve an onion and place one half flat-side down on a baking dish (your diy rotisserie base). Skewer it, then stack chicken high like a delicious Jenga tower. Top with red onion and a tiny foil hat to protect the peak. Roast 75–90 minutes, until golden, juicy, and slightly charred
  • For roasted garlic, slice the tops off, drizzle with oil and salt, wrap in foil, and roast 35–40 minutes until soft and caramelized
  • Mix yogurt, dill, cucumber, lemon juice, olive oil, and salt. Squeeze in roasted garlic, mash, and stir until smooth. Chill until showtime
  • Toss together cherry tomatoes, red onion, olive oil, and salt. Let them mingle for 5–10 minutes
  • Once the chicken’s done, rest it 5 minutes, then slice thinly
  • Assemble the wrap: pita, tzatziki, chicken, tomato salad, fries, and a parsley

Beef Gyro

  • Fresh tomatoes 250g
  • Red onion (to taste)
  • Lavash or pita, 2 pitas
  • Spices: paprika, chili powder, black pepper, dried garlic, salt—1 each tea spoon each.

Tzatziki

  • Greek yogurt 200g
  • Grated cucumber—3 table spoons
  • Garlic—2 whole heads
  • Mint—1 tea spoon
  • Dill—1 table spoon
  • Olive oil—2 table spoons
  • Salt and pepper—to taste
  • Lemon juice—table spoons

Recipe

  • Preheat the oven to 200°C
  • Place the ground beef on a sheet of parchment paper, cover with another sheet, and roll it out into an even thin layer. For a standard sheet, use about 350-400g of meat, leaving a little space at the bottom edge. Remove the top sheet of parchment and roll the meat into a tight log
  • Transfer the meat roll to a baking sheet. Add the whole garlic heads and tomatoes to the same sheet. Lightly drizzle the garlic with olive oil
  • Bake for 40 minutes at 200°C
  • When done, remove from the oven and let everything cool for about 15 minutes
  • While it cools, make the tzatziki: Squeeze the roasted garlic cloves out of their skins and mash them. Mix the Greek yogurt with the mashed roasted garlic, dill, mint, grated cucumber (finely grated and well squeezed to remove excess liquid), lemon juice, and olive oil. Season with salt and pepper to taste, then stir or blend until smooth
  • Remove the cooled meat from the parchment and tear or slice it into small pieces
  • Assemble the wraps: Spread tzatziki on a flatbread, add fresh cucumber slices (if using), the meat pieces, sliced red onion, and roasted tomatoes (peel the skins off first). Roll up tightly

Chicken Quesadillas

  • Some kind of wrap, preferably quesadillas
  • Cheddar and / or mozzarella

Recipe

  • Chop the chicken into cubes
  • Mix everything and simmer
  • Shred the cheese
  • When the chicken is done, can add a pinch of salt and lime
  • Put the quesadilla in the pan, then cheese, the chicken, then cheese. Fold it. Should be crisp on both sides

Starbucks bacon, sausage and egg wraps

  • ~0.5kg bacon or enough to cover a backing sheet
  • Preferably broth for the taters
  • Paprika, onion powder, garlic powder and salt
  • Tortillas
  • Some shredded soft cheese

Rough recipe

  • Bacon on the oven
  • Boil the potatoes, pre-chopped
  • Fry the beef and mix it with bacon
  • Add a bit more broth to the taters and add in all the spices
  • Scramble the eggs
  • Add everything in the tortilla

Beef Arayes

Recipe

  • Fill the pitas
  • Toast in the pan 2–3 minutes each side till the outside is crispy and the meat is cooked through

Beef with beans (meal-prep edition)

  • 300g of onions
  • 1 pack of chili seasoning
  • ~230g of bone broth
  • 3 cans of kidney beans
  • Tomatoes
  • Green chilies or bell peppers
  • Shredded soft cheese
  • 100g of Greek yogurt
  • Some tortilla strips / nachos (optional)

Recipe

  • Cook the beef in the pan
  • Add chili and onions, let cook
  • Halfway add the kidney beans, diced tomatoes and diced peppers
  • When done add 100g plain Greek yogurt mix and place into 8 meal prep containers and add cheese into each container
  • Optionally add nachos on top when serving

Chicken pesto bake

Recipe

  • Layer in the backing tray—rice, chicken diced, pesto, Greek yogurt, spinach, red onion, chicken stock. Mix well and add tomatoes on top
  • Put in the oven and bake it. Don’t know the time, I’ll wing it when I want to try

Meat


Air-fried chicken hack

The tech Season or marinate your chicken however you want, then place your whole chicken breasts in the air fryer and cook accordingly: 10 minutes Flip as soon as timer goes off 10 minutes on same temp Take out as soon as timer goes off rest for a minimum of 10 minutes

Bacon wrapped chicken

Ingredients

  • Some chicken drum sticks
  • Same amount of bacon strips as drum sticks
  • Bbq rub
  • Toothpicks
  • Honey
  • Bbq sauce
  • Sriracha
  • Apple cider vinegar

Recipe

  • Cut around the bone near the knuckle and detach. Remove any loose cartilage or tendons. Push the meat down and season with bbq Rub. Wrap with Bacon and season again. Secure with a toothpick
  • Add Chicken Lollipops in smoker or oven at 135 degrees for two hours
  • In a Bowl add Honey, bbq Sauce, Sriracha, and Vinegar and dip the Lollipops when the chicken reaches 74 degrees
  • 
Let that sauce tack on until the internal temperature reaches 185 degrees

Soldiers Steak and Eggs

Ingredients

  • Beef steak. Any cut to be honest
  • Eggs
  • Olive oil, beef tallow or lard
  • Butter
  • Garlic and green onions
  • Sugar
  • Water
  • Apple cider vinegar
  • Worcestershire and Tabasco
  • Salt, pepper and chili flakes to taste

Recipe

  • Pat the steak dry on all sides. Next, season every side generously with salt and pepper, making sure it’s evenly coated
  • Add the oil to a large carbon-steel or cast-iron skillet and turn the heat to high until it smokes lightly. Then, hold the steak with tongs and sear the fat cap for 30 seconds
  • Then, turn the steak on its side and let it cook for 1 minute
  • Move the steak around in a circular motion for 90 seconds to build a rich Maillard crust
  • Turn the steak over and let it cook without touching it for 1 minute
  • Lower the heat to medium-low and add 2 tablespoons of unsalted butter to the skillet
  • Once the butter is melted, baste the steak for 2 to 3 minutes until the top is golden brown. Then, set the steak on a rack to rest for 5 to 6 minutes
  • While the steak rests, drain off most of the cooking fat and place the pan back on the burner over low heat, letting it cool for 1 to 2 minutes. Turn the heat to medium and add 1 to 2 tablespoons of butter. Once it’s melted, add the eggs and fry them for 2 to 3 minutes or until they reach preferred doneness. Season the eggs with salt and set them aside
  • Place the pan back on the burner over medium heat and cook the minced garlic cloves for 30 to 45 seconds until fragrant
  • Add the Worcestershire, vinegar, sugar, pepper flakes, hot sauce, and water, then cook for 1 minute
  • Turn off the heat and swirl in 2 to 3 tablespoons of cold unsalted butter until the sauce is smooth and emulsified
  • I finish the sauce with green onions and serve it right away

  • Boil the eggs. Slightly under-cook them to pop out the yokes
  • Put everything in a blender and blend

Ingredients

  • 4 medium potatoes around 200g
  • 1 tea spoon of baking powder
  • Salt and Pepper (something other ig, need to test stuff out)
  • 1 table spoon olive oil
  • Olive oil spray

Recipe

  • Peal and chop the taters
  • Boil with baking soda till soft
  • Put on the tray with olive oil spray and bake at 240 C till the outside is crispy
  • Top with anything and serve

Double Baked Potatoes

Ingredients

  • Potatoes
  • Some kind of cheese (soft preferably)
  • Paprika

Recipe

  • Bake the potatoes
  • Gut them and mix the gutted stuff with cheese
  • Spoon it back in, top with paprika, and put back in the oven until crust forms

Human Kibble

Ingredients

  • Rice around 400g
  • Salt
  • 300g of peas
  • 150g of black or kidney beans
  • 500g of celery
  • 250g of carrot
  • 250g of green peppers
  • 100g onion
  • 500g of potatoes
  • 12 Eggs
  • Oil
  • Salt & Pepper to taste

Recipe

  • Cook the rice, add oil / butter and salt
  • Boil finely chopped potatoes
  • Chop carrots, green peppers and onions. Sate in batches in oil.
  • Scramble and cook the eggs
  • Clean and chop celery
  • Mix everything. Divide by 10 and sort into meal prep stuff.
  • In fridge 7–10 days. In freezer up to a couple of months
